Beetschwester Restaurant in Münster

Green cuisine meets a thoughtfully crafted concept: the “Beetschwester” restaurant on Münster’s Tibusplatz serves vegan and vegetarian dishes from around the world using seasonal ingredients. The restaurant space with its large front windows was decorated by interior designer Nikola Bacher of nikogwendo, who paid special tribute to the restaurant’s concept in her design choices. The interior is based on use of natural materials with colour accents in green and blue hues. A particular highlight is the restaurant’s vibrant mural featuring an organic theme. When it came to choosing the right chairs, there were three important criteria: durability, comfort and the “Made in Germany” label. 

Thonet’s 118 range offered the ideal solution. Sebastian Herkner’s design is a classic wooden chair that lends subtle elegance to any space without overpowering other interior details. Providing exceptional comfort, the selection includes eleven barstools with backrests (118 H) and four classic chairs featuring canework seats (118), all crafted from natural beech.

While the canework embodies authentic craftsmanship, tradition, and Viennese coffeehouse charm, it integrates seamlessly into a contemporary hospitality setting. With its seat frame bent from a single piece of solid wood, the 118 directly references the 214 – the archetype of the Thonet bentwood chair. Furthermore, by utilizing a minimal number of individual components, the construction embraces the modular principle first pioneered by Michael Thonet in the mid-19th century.

The 118 combines contemporary design and natural materials with more than 200 years of manufacturing expertise. Bearing the “Made in Germany” hallmark, the design embodies the enduring quality and authenticity that Beetschwester owner Regina von Westphalen and interior designer Nikola Bacher envisioned for the restaurant’s distinct atmosphere.
